These veggie strips are delicious, crispy, and with a crunch of vegetables. It is a perfect fried snack to make this monsoon and have it with a cup of tea.

How to make veggie strips

Add canola oil or refined oil in a deep bottom pan, add ginger garlic paste, and saute it for 2 to 3 minutes. Then add finely chopped capsicum, grated carrot, boiled sweet corms, boiled peas, roughly chopped coriander leaves, chopped green chili, and mix it well.

Season it with red chili powder, salt, and black pepper powder. Cook the veggies at low flame for 5 to 8 minutes then add mashed potatoes and Italian seasoning. Combine it nicely and turn off the flame.

In a small bowl add cornflour and water to make a slurry. Add cornflour slurry to the potato mixture and mix it well. The mixture will come all together, corn and peas will stick to the potato mixture.

How to make veggie strips

Transfer the potato mixture to a cake mould or to a baking tray lined with parchment paper, and spread it evenly with a spatula or a spoon at about 1 cm thickness.

Cover it with parchment paper or cling wrap and freeze it for at least 3 to 4 hours. After 4 hours the mixture will become hard and now cut it into finger-size strips.

Coating & Frying

To make the slurry for coating, mix all-purpose flour (maida) + cornflour + water = slurry.

Dip each potato strip in the slurry and then coat it with the breadcrumbs. Repeat the same process for the rest of the potato strips.

Fry it in a medium hot oil at medium flame until golden brown. Once fried transfer it to absorbent paper and serve it hot with coriander chutney or tomato ketchup or sweet chili sauce.

  • In case you don’t have carrots or you don’t like eating corn then substitute it with other veggies like beans or onions.
  • Do not skip the freezing process otherwise potato mixture will not hold the strip’s shape.
  • Be careful while frying sometimes peas or corn can pop.
  • You can air fry these veggie strips.
  • You can store it in an airtight container in the freezer after coating them for 20-25 days.

Can I add cheese to these veggie strips?

Yes, you can add grated mozzarella cheese to the potato mixture.


Can I skip corn and peas in this recipe?

Yes, substitute it with beans, carrots, mint leaves, etc. To add more flavour you can also add chaat masala or garam masala.
