Veg sandwich recipe with mayonnaise, a simple sandwich recipe with creamy mayonnaise, veggies crunch with seasoning stuffed in crispy toasted bread. It is perfect breakfast or snack.

It is no fail, fuss free, quick and tasty recipe. I am not a fan of non-toasted version of this sandwich but if you like it without toasting then try it also remove the sides of the bread for smooth texture.

✨Ingredients

  • Mayonnaise: I have used eggless mayonnaise you can also use egg mayonnaise or vegan mayonnaise. for extra flavour use flavoured mayonnaise according to your taste.
  • Veggies: Capsicum, carrot, tomato and cucumber. but it’s not compulsory to use the same veggies you can use boiled corn, cabbage, onion, coriander leaves or whatever is present in your pantry there is not limits! but make sure to use finely chopped or grated veggies.
  • Spices/seasoning: salt, black pepper powder and dried oregano. decrease or increase the amount of spices according to your taste, you can also use pizza mix, dried basil or red chilli flakes for more flavour.
  • Bread: Use any bread of your choice white bread, wheat bread or multi-grain bread.
  • Butter: butter can be substituted with cooking oil or vegan butter.

🍞How to make veg mayo sandwich

  • In a bowl add mayonnaise, finely chopped capsicum and tomatoes, grated carrot and cucumber.

  • Add salt as per taste, black pepper powder and oregano. mix it well so that it is combined nicely.
  • Cut each bread slices into 2 halves as shown in image below, spread the mayonnaise mixture over the bread slice and press both the slice gently.

  • Spread little butter on both side of bread and toast it on pan or griddle. cook it until golden brown and crispy from both the sides.

  • You can use your choice of bread either it’s brown or white or multi-grain bread.
  • Cheese lover? add grated processed cheese in the mayonnaise veggies mixture and enjoy cheese mayo toast.😉
  • Want to make these sandwiches for guest or party?then you can make make mayonnaise+vegetable mixture and keep it in the refrigerator. make sure you don’t add salt or pepper or any spices as vegetable will leave water. add seasoning, spread the mixture over bread when guest arrives or when you eat.
  • Don’t overload the veggies in mayonnaise, the quantity of both should be balanced.
  • Serve the sandwich immediately otherwise it may become soggy and soft.

What other vegetables can be used?

Boiled corns, cabbage, bell pepper, onion, green chilli, coriander leaves, mint leaves…… their is no limit. use veggies you like or which is available at your kitchen pantry.

Can we make it vegan?

Yes you can! substitute mayonnaise and butter with vegan mayo and vegan butter.

What can we use instead of mayonnaise to make this sandwich?

Use hung curd or malai(thick cream formed over the boiled milk), taste won’t be same as mayonnaise but it will taste good and is creamy, thick like mayo. if replacing mayo with malai then try malai sandwich.

Can we eat it without toasting?

If you like non toasted version of this sandwich then go on, non toasted mayo sandwich stays fresh for 5-6 hours it is perfect for picnic or parties.
