Chicken drums of heaven are basically marinated fried chicken lollipops that are tossed in garlicky and very flavourful sauce. It tastes delicious and every bite is full of flavors.

I had drums of heaven 7 years back in a restaurant called Mirror which is located in Mayur vihar Delhi (India). Recently I have not visited since 2 years but they serve delicious drums of heaven but I never got the same taste anywhere else.

I love food and love visiting different restaurants and cafes! So Please suggest me some places serving yummy food in Delhi NCR.

Ingredients

This recipe requires very basic ingredients which are very easily available.

Chicken– Use fresh chicken lollipop pieces.

Ginger, garlic & chilies– Ginger-garlic paste adds extra flavor and aroma to this chicken. Finely chopped ginger, garlic, and green chili in the sauce add a little crunch and burst of flavor in every bite.

Sauces– Tomato ketchup, green chili sauce, schezwan sauce, and soy sauce. (I have used dark soy sauce you can use light too)

Cornflour– Cornstarch or cornflour anyone can be used. (1 tablespoon cornflour + 4 tablespoon water = cornflour slurry). This slurry thickens the sauce and makes it glossy.

Other– Egg white, and all-purpose flour.

How to make Chicken drums of heaven at home

Frying chicken lollipops

In the 1/2 kg chicken lollipops add ginger-garlic paste, salt, soy sauce, and Kashmiri red chili powder or paprika. Mix and marinade it for half an hour.

(Note– If you don’t have Kashmiri red chili powder then use normal red chili powder to it but make sure to decrease its quantity as Kashmiri red chili powder is less spicy and also gives the red color to the chicken marinade.)

After half hour add 1 egg white, cornflour or cornstarch, and all-purpose flour to the same bowl. Mix and coat the chicken lollipops well with the marination.

Fry it in a wok or kadhai at medium flame for 5 to 7 minutes or until golden brown. To check whether the chicken is cooked or not, prickle it with a fork or knife. Make sure the chicken is crispy+golden+slightly brown. Once fried transfer it to a kitchen paper towel so that excess oil is absorbed.

(Note– If your chicken is not crispy then you can fry it again)

Drums of heaven sauce

In a wok or kadhai add canola oil or refined oil then add chopped garlic, ginger, and green chili. Chop it finely with a chopper to chop ginger, garlic, and green chili. Stir fry it for 2 minutes then add all the sauces- Tomato ketchup, green chili sauce, schezwan sauce, and soy sauce. Mix it well.

(Note– You can use homemade as well as store-bought schezwan sauce.)

Then add salt and cornflour slurry (cornflour+water). Mix the sauce nicely and add fried chicken to it. Mix it again so that the sauce is coated well with the sauce.

Top it with chopped coriander leaves or spring onion. Serve it hot and immediately.

Top tips

  • Marinating is important at least for half hour, If you have time marinate it overnight in the refrigerator.
  • If you don’t have Kashmiri red chili powder then use paprika. If you don’t have both then decrease the quantity of red chili powder to half and also add little red food color to it.
  • All-purpose flour also known as maida in Hindi can be substituted with rice flour.
  • Don’t fry the chicken at a high flame or at a low flame otherwise, it may become soggy or uncooked from the inside. Fry it in medium hot oil between low to medium flame.
  • You can increase or decrease the quantity of sauce as per your taste.
  • You can add onions or capsicum to the sauce if you want to.

  • 2 tablespoon ginger garlic paste
  • 1 teaspoon salt
  • 1 teaspoon soy sauce

  • 1 egg white
  • 1 tablespoon all purpose flour
  • 2 tablespoon cornflour
  • 1/2 kg Chicken lollipop

  • 1 tablespoon oil
  • 3 tablespoon chopped garlic
  • 1 tablespoon chopped ginger
  • 2 chopped green chilli
  • 4 tablespoon tomato ketchup
  • 2 tablespoon green chilli sauce
  • 2 tablespoon schezwan sauce
  • 1 teaspoon soy sauce
  • 1/2 teaspoon salt
  • 1 tablespoon cornflour
  • 4 tablespoon water

Instructions
