It is crispy and delicious, and trust me you will get addicted to it, whenever I make this popcorn or KFC-style peri peri chicken strips my siblings are never satisfied they yearn for more.

INGREDIENTS IN POPCORN CHICKEN

  • Chicken- use boneless chicken thighs or chicken breast, I have used chicken thighs for this recipe.
  • Marination- this popcorn chicken needs very basic spices and aromatics for marination like red chilli powder, salt, dry mango powder, and ginger garlic paste. I guess all the ingredients would be available in any kitchen pantry. Instead of ginger garlic paste, you can also use ginger and garlic powder.
  • Flour- all-purpose flour (maida)
  • Water- use chilled water or ice cubes and normal water.
  • Oil- canola oil, refined oil, or extra light olive oil.

HOW TO MAKE POPCORN CHICKEN WITHOUT BREADCRUMBS AND BUTTERMILK

Add 1 teaspoon salt, 1/2 teaspoon red chilli powder, 1 teaspoon dry mango powder (amchur powder), 1 tablespoon ginger garlic paste, and 1 teaspoon lemon juice to 200 grams of boneless chicken.

Note- use small pieces of chicken thighs or chicken breast.

Combine it well and marinate it for 30 to 45 minutes.

KFC CHICKEN COATING

In a large mixing bowl add 1 cup all-purpose flour and 1/2 teaspoon salt mix it well. Coat the marinated chicken with flour then remove the excess flour from the chicken by using the mesh or frying strainer.

Dip the flour-coated chicken in the chilled water for 50 to 60 seconds by using a frying strainer to dip all the chicken at once.

Transfer the chicken to the flour again and coat the chicken with flour by gently pressing in the fist. Cracked line textured will be formed or you can check the image below for your reference.

Note- Don’t keep the flour-coated chicken for too long as it will lose its crispy texture, the best option would be to coat around 10-12 chicken pieces and fry. Repeat the same process again.

Frying popcorn chicken in hot oil

Fry it in medium hot oil until golden brown and sprinkle it with a spice mix of your choice. Peri peri spice mix or Italian mix goes well.

WHAT TO SERVE WITH POPCORN CHICKEN

Dip: mayonnaise, sweet chili sauce, hot sauce, tomato ketchup, or Greek yogurt dip.

Sides: baked potatoes, french fries, chips, salad, or sandwich.

Drink: sweet lemon soda, Pepsi, or mojito.
