Learn how to make fruit cake without eggs- step by step recipe with pictures. this recipe tastes delicious and in every bite, your mouth will be exploded with the flavours of dried fruits and nuts.

Traditionally the fruitcake is prepared many days before Christmas and the dried fruits are soaked in rum for weeks. But you can prepare this instant fruit cake without eggs and rum.

You can also try- eggless marble cake, eggless almond cookies, eggless chocolate banana bread.

I have used dried fruits and nuts, that is dried figs, dried dates, dried apricot, dried berries, almond, raisins, cashews, and walnuts.

Step by step instructions with pictures:

Soak the mix fruits and nuts in mixed fruit juice or orange juice for 2 to 4 hours.

I have use chopped almond, cashews, walnuts, dried figs, dried dates, dried apricot, dried berries. That is total of 1 cup chopped fruit and nuts.

Meanwhile make the caramel sauce by adding sugar in a saucepan and melt it. When the sugar is melted and turns golden in colour, turn off the flame.

Add 1/3 cup of water by stirring constantly and keep it aside. (Take Care while pouring water in the melted sugar.)

To make the cake batter, in a bowl add milk and oil then mix it well with a whisk.

Then add all-purpose flour, coffee powder, cinnamon powder, cardamom powder, sugar, baking powder and baking soda.

Mix it well, then add caramel liquid and soaked fruits and nuts including juice.

Mix it until a smooth batter is formed.

Transfer it to a greased cake tin and garnish it with some cashews and almond.

Bake it in a preheated oven at 180degree Celsius for 40 to 45 minutes or until bake.

When baked, let it cool down. Slice and serve.

Top tips:

  • Store it in an airtight container in the fridge.
  • We don’t drink alcohol, so I have used mixed fruit juice to soak the dry fruits. So feel free to use rum or brandy instead of fruit juice.

Eggless fruit cake recipe without rum, get the flavours of fruits and nuts in every bite.

Ingredients

  • 6 tablespoons sugar
  • 1/3 cup water
  • 1 cup dried fruits and nuts
  • 6 tablespoon mix juice or orange juice
  • 1 cup milk
  • 1/2 cup refined oil or canola oil
  • 1 tablespoon coffee powder
  • 1/4 teaspoon cinnamon powder
  • 1/4 teaspoon cardamom powder
  • 2 cup all-purpose flour 
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 teaspoon vinegar

Instructions

  1. Soak 1 cup dried fruits and nuts in 6 tablespoons mixed fruit juice or orange juice for 2 hours.
  2. Meanwhile, for preparing caramel add 6 tablespoons of sugar in a pot and melt it when the sugar is melted then turn off the flame.
  3. Add 1/3cup of water in melted sugar and stir.
  4. Keep it aside.
  5. For preparing cake batter- in a bowl add 1 cup milk and 1/2 cup refined oil or canola oil. Mix it well.
  6. Sift 2 cup all-purpose flour, 1 teaspoon baking powder, 1/4 teaspoon baking soda, and 1 tablespoon coffee powder in it. Then add 1/4 teaspoon cardamom powder, 1/4 teaspoon cinnamon powder, caramel, and soaked fruits including juice.
  7. combine it well.
  8. Lastly, add 2 teaspoons of white vinegar and again combine it.
  9. Transfer the cake batter to the greased cake mould and bake it in a preheated oven at 180 degree Celsius for 40 to 45 minutes or until the toothpick inserted in the centre comes out clean.
  10. When baked, transfer it to a wire rack to cool.
  11. Slice it and serve.

Notes

  1. Don't overbake the cake.
  2. Store it in an airtight container in the fridge.
  3. You can soak the dried fruits and nuts in mixed fruit juice or orange juice. I have used store-bought juice.
