Hariyali paneer tikka recipe|paneer pahadi tikka (also known as hariyali tikka, green tikka or hariyali paneer)

Paneer is the most popular cheese in India and it is lpacked with nutrition. As the majority of Indian follow vegetarian diet so it is preferred as an alternative to chicken.

Paneer tikka is the most loved appetizer in India and is widely consumed. it is the best alternative for chicken tikka. This hariyali paneer tikka is different from red marinade paneer tikka.

It has all the greens in it like coriander, spinach, chilli. If you prefer you can also add mint leaves and basil leaves as well.

There are various varieties of paneer tikka like malai paneer tikka, lehsuni paneer tikka, achari paneer tikka and many other varieties.

This paneer pahadi tikka is

Top tips:

  • Dry roast the besan or chickpea flour in a pan by stirring continuously. When you start getting aroma turn off the flame. Don’t over roast the flour or burn it.
  • If you have access to pudina(mint leaves) then blend pudina with coriander and spinach leaves.
  • Marinate the paneer tikka in refrigerator, as it has paneer(cottage cheese) and yogurt in it and it may become sour.
  • If you don’t have coal then skip the process and if you have it then make sure to give it coal smoke for tandoor flavour.
  • Cook the paneer between medium to high flame and if cooked on low flame then paneer may turn hard and rubbery.

How to make hariyali paneer tikka:

1. In the mixture blending jar add green chilli, garlic, cumin seeds, coriander leaves, spinach leaves(palak) and salt.

2. Blend it until the smooth consistency is formed. Then add yogurt and blended green mixture in a bowl and mix it nicely. (take big bowl to make your work easy while mixing)

3. After mixing add roasted gram flour(besan), dried fenugreek leaves, ginger garlic paste, mustard oil, red chilli powder and salt in the bowl.

4. Again mix it nicely and imagination mixture is ready. Put in the cubed paneer, capsicum, onion and tomato and mix it nicely so that the green mixture is coated well on paneer and veggies.

5. I would recommend you to mix it hands (wear a gloves), using a spoon or spatula may break paneer and the marination will not be coated properly.

6. Cover and marinate the mixture in the refrigerator for 40minutes to 1 hour.

7. Also, we are making Hariyali paneer tikka on tawa, so for a smoky flavour heat the small chunk of coal on flame then place the foil or a small bowl over the marinated paneer tikka and place the hot coal in foil or bowl.

8. Drizzle 1/2 teaspoon ghee or oil on hot coal and cover the bowl with a plate. Let the marinated paneer tikka get smoky flavour.😋

Making hariyali paneer tikka on tawa:

9. Meanwhile spread a tablespoon of canola oil all over tawa and heat it on low flame. Uncover the plate after 1 minute and place the marinated paneer, capsicum, tomato and onion on tawa.

10. Cook it on medium to high flame, flip it with tong when one side turns golden, flip it 3-4 times. When both the sides turns golden transfer it to a plate and serve it with coriander yogurt chutney.

11. Repeat the same for rest of the marinated paneer tikka and Serve it hot.

Ingredients

  • 400 gram paneer(cottage cheese)
  • 2 medium size onion (cubed)
  • 1 medium size capsicum(cubed)
  • 1 medium size tomato(cubed)
  • 2 to 3 tablespoon oil for cooking paneer tikka 

Green sauce

  • 4 green chilli
  • 6 clove garlic
  • 1 cup chopped coriander leaves 
  • 1/4 cup chopped spinach leaves
  • 1 teaspoon cumin seeds(jeera)
  • 1/2 teaspoon salt

Yogurt marination

  • 1/2 cup yogurt(dahi)
  • 1 tablespoon dried fenugreek leaves(kasuri methi)
  • 3 tablespoon dry roasted gram flour(besan)
  • 1 teaspoon ginger garlic paste
  • 2 tablespoon mustard oil
  • 1 teaspoon salt 
  • 1 teaspoon red chilli powder 

Charcoal smoke

  • 1 small chunk coal 
  • 1/2 teaspoon ghee or oil

Instructions

To prepare marination:

  1. In the blending jar add 4 green chilli, 1 cup chopped coriander leaves, 6 clove garlic, spinach leaves, 1 teaspoon cumin and 1/2 teaspoon salt. Blend it until smooth mixture is formed.
  2. In a bowl add blended green mixture and 1/2 cup yogurt then combine it well.
  3. After mixing, in the same bowl add 3 tablespoon roasted besan(gram flour), 1 tablespoon dried fenugreek leaves(kasuri methi), 1 teaspoon salt, 1 teaspoon red chilli powder, 2 tablespoon mustard oil and 1 teaspoon ginger garlic paste.
  4. Again mix it nicely and then add diced paneer and veggies in it. Mix it nicely so that veggies and paneer are coated with marination.
  5. Cover and let it rest in the refrigerator for 40 min or 1 hour.

For smoky flavour:

  1. To get the smoky flavour in hariyali tikka, place a small foil paper or a bowl in the centre and put hot coal over it then drizzle 1/2 teaspoon of ghee over hot coal.
  2. Cover the bowl with the plate so that paneer tikka get smoke.

Preparing on tawa:

  1. When paneer get the coal smoke, uncover the plate then add canola oil or refined oil on non stick tawa or pan and place the marinated paneer and veggies on it.
  2. Cook it between medium to high flame by flipping it 2-3 times until both the sides turns golden.
  3. When both the side are cooked serve it hot with lemon and coriander yogurt chutney.
