What you need to make chuara milk

Dry dates: dry dates also known as chuara in India. basically it is dehydrated and is slightly hard.

Milk: full fat buffalo milk.

Water: it helps to soften the dry dates and release all its natural sweetness in the water so that the milk is slightly sweet as well.

How to make chuara milk

  • Deseed the dry dates or chuara with the help of knife or break it with rolling pin and then take out the seed.
  • Now, In a kadhai add water and add deseeded dry dates in it. cook it at medium flame until the water is reduced to half.

(Note: this step will ensure that all the natural sweetness of dates will release in water and the dates will get slightly soft as well)

  • When the water is reduced to half then add milk in the kadhai and cook the milk at low flame until it is reduced to half, becomes thick, dry dates or chuara becomes soft and you may also notice lot of malai.

  • Keep stirring the milk in between but make sure to cook it at low flame otherwise the milk may burn.
  • I have cooked this dates milk for 35 minutes, it can take around 35-40 minutes to get the perfect consistency.

(Note: You may be thinking that “how will I get to know that the milk is done?” When you’ll notice that milk is reduced to half, have lot’s of malai, thick consistency and lastly check the dates it should become soft. If all these things are done then turn off the flame.)

  • Turn off the flame and always serve it hot.

  • Always remember to take out the seeds from the dates before adding it to water.
  • No sugar is added in this recipe as it has the natural sweetness of dates but if you prefer it to be more sweet then add little sugar.

Ingredients

  • 8 dry dates
  • 1/2 cup water
  • 4 cup milk

Instructions

  1. Firstly, deseed 8 dry dates with the help of knife or rolling pin.
  2. Then in a deep bottom pan add 1/2 cup milk and dry dates. Cook it at medium flame until the water is reduced to half.
  3. Now, add 4 cup of milk and cook it at low flame by stirring occasionally.
  4. Cook the milk at low flame until it is reduced to half, becomes thick, dry dates or chuara becomes soft and you may also notice lot of malai.
