Semolina is a healthier choice compared to white flour.it is made from durum wheat. semolina is rich in carbohydrate, protein and fibre.

  • Keep a watch when boiling the pasta – don’t over boil it.
  • Use a big pot to boil the pasta and make sure that water is boiled Before adding the pasta.
  • If the pasta start to sticks while shaping then dust semolina or all-purpose flour.
  • minimize the usage of excess flour, when shaping the pasta. Otherwise, the pasta will become starchy
  • If you have a pasta machine then you can use it if not then no need to invest in the pasta machine. you can roll the dough with a rolling pin to make it thin and use the knife to shape it.

How to make pasta step by step instructions

Start by grinding the semolina into a fine flour.

Now in a large bowl, add semolina flour and salt. Knead the dough with water.i have used 1/2 cup water in which 3-4 tablespoon water was left at last.

After kneading the dough cover it with a damp cloth for 20-25 minutes.

After 20-25 minutes, divide the dough into 4-5 part and start rolling with rolling pin on board.

The dough should be rolled until thin and make sure you cover the rest of the dough while rolling.

When the dough is rolled, start shaping it. 

You can shape it the way you like. I have shaped the pasta in bow tie and it doesn’t require any special equipment or machine for that.

For making bow tie, cut the rolled dough into a rectangle shape then pinch from both the sides with thumb and forefinger. Then pinch it again to the centre.

you can shape small or large, it depends on the size you cut the rectangle of rolled dough.

Do the same for the rest of the dough. After shaping you can boil it and prepare it.

Ingredients

  • 1 cup semolina (sooji, rava)
  • 1 tablespoon salt
  • Water to knead the dough

Instructions

Grind the semolina into a fine powder.

In a large bowl add 1 cup semolina, 1 tablespoon salt and water to knead the dough.

The dough should not be either too hard or too soft.

After kneading the dough, cover it with a damp cloth and rest it for 20-25 minutes.

Then roll the dough on board with rolling pin until the dough becomes thin. cut the rolled dough into square, and you can cut according to your choice either big for big pasta and small for small one.

Shape the square into a bow tie pasta i.e., pinch the dough from both the sides with thumb and forefinger and the pinch it again to middle. do the same for the rest of the dough.

While shaping the rolled dough cover the rest of the dough with a damp cloth otherwise the dough will get dry and hard.

When shaped boil the pasta with water and some salt in it.

Notes

Minimize the usage of excess flour, when shaping the pasta. otherwise the pasta will become starchy when you'll boil it.
